At least hit is blue now, and with reforging you don't really have to worry about getting to a point where you can't gem for hit since you can just reforge some of it away... but it's still a rather silly requirement on the best meta... maybe it's just there as further encouragement to pick up socket bonuses (although the bonuses look pretty awesome in beta).
Why the despair over the chaotic meta reqs?

If I had been uber-dedicated to total min/maxing my 1st main toon in LK (I 25 man raided as resto shaman til this past spring - we got server 4th - not great considering our server is generally a "slack" progression server - 25 man normal LK kill - then our guild fell apart), I would have been BS/JC.
But since it was my 1st 80, I had chosen herbalism and mining while leveling (but never capped mining), and switched to herbalism/alchemy. I found alchemy useful until mana stopped being an issue for me (around mid-ToC), with the boosted flask power and longer duration (as I was simply not "rich" - my own flasks were "free" and I could sell them nicely on the AH). Herbalism - not so useful.
This toon was primarily a BG toon until like May (when I started raiding 10 ICC on it with friends). I had chosen skinning/LW while leveling. As I'm a resto when raiding/BGing, I probably should have swapped skinning to JC, but never did.
My 80 priest is tailoring/chanting, and that seems acceptable, though I have not once raided on it. My pally is leveling as mining/BS (aiming to be holy and 80 before cata, but probably won't make it by then - I want to have all 4 heal classes at 80 for cata so I can choose my main, but likely I will only choose from 3 instead of 4).
Unless things drastically change in Cata, your professions won't really matter. Everything offers something, but nothing is really make-or-break unless you're so totally focused on progression, IMO.
But I would put JC as one of any 2 "best" professions, and the other probably depends on your class/spec (and I know nothing about engineering, and even less about how it's changing in Cata - but my plan was to level a goblin rogue in cata on the side with engineering as one of his professions).
