Macaroni Noodles White Cheddar Cheese Kosher Salt Flour Butter Milk Bring large sauce pan filed with water to boil, add Macaroni Noodles and a pinch of Kosher Salt, stir smoothly, boil until Aldente' (depending on noodles, 7-11 min). In Small sauce pan add 2 cups Milk, 1 cup Shredded White Cheddar cheese and two tablespoons of Flour, stir continuously until smooth. When noodles are aldente' drain and let sit for a minute, place slices of Butter on top while still hot, allow to melt and stir. Place a portion of noodles on a plate, add a generous amount of sauce, serve hot with steamed broccoli. I like to add Onions to the sauce for flavor variety, and for a kick, I will add some Cayenne pepper to the sauce will mixing it for a good kick. |

Heh, one evening in a fit of boredom, I invented the Mac N' Cheese Carbonara. Simply add peas to the macaroni as it is cooking, and drain the two together. After adding the cheese sauce to the pasta and peas, sprinkle crumbled bacon over the top. You will want to use a mild cheese for it to work well.

I heart you Wolfe! I usually have problems making bechamels because of milk =P This recipe makes it seem so easy! But shouldn't you cook away that raw flour taste into some sort of roux? Bah, I'll try it your way first before I start complaining.

It depends on the flavor of cheese. Sharp White Cheddar usually masks it well. |
