I'm getting conflicting information from ingame vs. my armory page. Per the ingame value, I'm showing about 2042 hit in order to reach 17%, while on the armory page, it's showing 1741 to reach 17%.
Which is correct? Do I need 2042 to reach hit cap for end game raiding?

That's because the combat ratings for the game at the level cap haven't really changed since Cataclysm launched. Those conversions and tables are constant throughout an expansion unless Blizzard makes a dramatic change, which they never did. Whitetooth's math is correct and those aren't simulations - all of that is calculated from data gathered within the game.
Where exactly are you seeing in-game that says you need 2042 hit rating to reach 17 percent? The only place I can think of that would come up with that conversion would be physical hit rating for your weapons, which doesn't concern a warlock.
From Whitetooth's tables:
1% melee hit = 120.1088 hit rating
17% melee hit (which is grossly overcapped) = 120.1088 * 17 = 2041.8496 ≈ 2042 hit rating
My best guess is that you're looking under the Melee tab of your character sheet and not the Spells tab when looking at your Hit Chance value.

If you have to ask after reading exactly what the hit cap is from Cataclysm, but don't trust it because it's from Cataclysm not MoP, then you shouldn't have posted in this thread to ask. Make your own thread for your question, that way potentially outdated info stays buried and isn't brought back to the front page.
As for your question, I know the hit cap for melee is still 8% for raids, 6% for dungeons and PvP at 90. I know hit for casters has changed somewhat though, as I don't play caster classes I'm not sure what it is.

Melee need 7.5% for raids, 6% for dungeons, 3% for PvP. 3% plus 1.5% per level difference.
Casters need 15% for raids, 12% for dungeons, 6% for PvP. 6% plus 3% per level difference. Expertise, if for some reason you have some as a caster, will count toward these caps.
