hey im new to wow and was wondering what server does most aussie play on at a time ?

Either Frostmourne or Barthilas in my opinion

I'm a Dath fan, especially if you don't think you'll be a fan of PvP.

There are plenty of Australians on most of the Oceanic servers. I don't think there is any particular one that is the Australian "home" server as such. You are better choosing a server on the basis of the style of gameplay you are after (PVE/PVP, progression raiding/not raiding, etc).
