Ok so I have a priest healer. Now I'm wondering...is it more beneficial to have 2 weapons like daggers or maces in each hand, or is a staff more beneficial? I see some priests with 2 one hand weapons, and others with a staff, what's the difference? Is 1 set better than the other or...?
Just to correct you, Priests cannot dual wield, but we can use a main hand weapon and what is called an offhand frill. Some of those offhand frills do look like maces, daggers, or staves though.
While leveling it won't make too much difference, and a staff can actually be easier simply because you only need to worry about replacing/upgrading 1 item instead of 2.
When you reach maximum level though, usually a MH and OH will be stronger than a staff due to enchants that can be placed on them. The MH and staff will both use the same enchant, but the OH can also have an enchant applied to it increasing your Intellect.
However, that's not hard and fast rule. If you find a staff that's much higher item level than your current MH/OH combo, chances are the staff will be better.
The simple, short answer to your question is whichever gives you more stats overall.
