Discipline doesn't seem bad for leveling, which keeps it from being too boring. And I think the dynamics of group vs solo content might keep Shadow more interesting in groups.

Your question is highly subjective. Those in this thread who have warlock mains find those more fun. Those with priest mains find priests more fun; thats why they are our mains. If you've never played either class why don't you make one of each and try each one out? Only you can answer which is "more fun".
