Am I getting more crit if I gem 80int/160 crit or would I get more if I went pure 160 int?

You'll get more Crit if you gem for Crit.

Though it is probably better to gem spirit/crit or int/crit for overall output. Unless you're going for some weird straight crit build with low spirit, which I've seen effectively used by a few monks.

Currently doing this, sans being a monk.

Can also be effective for resto shaman, since we regenerate mana from crit.

600 crit rating = 1% crit
2533 int = 1% crit

Both monks and resto shamans get regen where crit is roughly 25% as good as spirit for personal regen. (obviously can vary quite a bit depending on spell usage)

For monks in general though, Int gems provides higher overall healing done AND higher burst potential. Especially true when you toss in the legendary meta kinda meh-ing the mana tea regen benefits of crit.
