I think a lot of replies are missing the question the OP has.
It sounds like you already have a stable priest/druid locked in and are asking what class to add as a 3rd healer?
Normally if someone asks what healer to play I'd recommend monk all the way because i love them and they're really strong in 10m. Unfortunately you already have a druid already though, which takes a lot away from what a monk can offer.
With the huge buffs to resto druid and i believe some buffs to shaman as well i'd have to go with shaman.
Listing some reasons
1) resto druid covers HoTs so a monk addition would not be as strong as a disc/mw 2heal
2) shaman has more raid cooldowns than monk
3) avoids gear competition between druid/monk
4) shamans can most easily switch to dps as elemental using mostly the same gear
Its rather simple really.
Disc priest-because disc priest absorbs make ten man content mechanics nearly trivial. Inc 200k aoe, a spirit shell has that covered.
Holy Pally- Best single target healer in game, with cooldowns and a decent AOE from time to time
and a third healer can be any class, I would prefer a holy priest or druid to be honest.

If your raid is melee heavy, I'd go shaman. If it's range heavy, I'd go monk. They are roughly equal as healers, with more cooldowns from the shaman and more constant throughput from the monk.
If range vs melee isn't an issue, I'd go monk. With a monk you can use them as melee or as a healer, or you have the 3rd option. Have them dps in heal spec/gear for the eminence healing. This kind of gives you half a healer and half a dps. But the nice thing about going that route is when it hits the fan they can go full healer and when the dmg is negligible, they can dps.

easiest would be disc/MW, or holy pally/MW. Disc or holy pally for tank heals, MW for raid heals. Disc/holy are also both good at slightly lowering big hits (DA or barrier, mastery and all of disc healing). MW are simply the most dominant throughput healer by far, and have the strongest burst healing (single target and AoE.) MW beat out rsham burst as well. MW also have the strongest dps of any healer. I'd go disc/MW probably, since they will have so much smart healing and added DPS that DPS checks should be trivialized, and unless damage really ramps up they won't even really need to 'heal".
Monk/Disc generally the comp to run due to the amount of free dps both specs provide. Atonement + RnM/fistweaving is generally the amount of healing you need for random spikes of aoe damage (Such as Lei shen Thunderstruck).
However, Monk/Paladin imo is the strongest 10 man comp. For these reasons:
Paladins are the best tank healers in the game, because of this strength this allows your tanks to soak vengeance for higher tank dps. This also allows your monk healer to fistweave and keep the raid blanketed with renewing mists and keep the raid alive while fistweaving. This also allows the paladin to go a heavy mastery build (full 320 mastery gems) because tank healing doesn't require much spirit.
Disc/Hpal is basically the same thing, disc/hpal and monk/hpal have different strengths for different fights.
Disc Hpal would be stronger on fights like:
Monk/hpal would be stronger on
Twins (if you 2 heal)
Only time I would consider Disc/monk over hpal/x would be on fights where you need a ton of damage and tank healing isn't a real issue. However, almost every fight in ToT tanks can abuse vengeance.
Best 3 heal comp would probably either be
Only time I'd pick resto shaman over disc would be on a fight like Ra-den or Megaera. Where the max hp and additional raid cds and mana would be needed from a resto shaman.

3 healers in a 10m? >.>
It's good to start with 3 healers. At the beginning of a tier more fights are 3 healed until you get gear and outgear the place. And for some heroic fights you need 3 healers. 10 man guilds I been in always have 3 healers. As tier goes on, either a healer starts to sit(we take turns) - or a healer gets a DPS OS(I don't have one cause I hate to dps).
It's way better having a solid dedicated healer on a 3 heal heroic fight then someone going OS.
