Gearing up a DK for Herald of the Titans

I'm in the process of gearing up, but I am not familiar with lvl 80 gems/chants as I was a huge noob in wrath. As far as I know, there's no mastery gems at that level so should i gem stamina? or something else lol? He's a blood dk btw

Could be wrong, but wasn't herald removed in 5.0.4?
It is still in the game. Had a guildmate get that achievement and Observed last night (or whatever the 10 man Algalon one is called).
Search the achievement on wowhead and read the comments there.
If you're tanking, yeah, gem stamina. Algalon hits like a truck, and fast. More stamina is more breathing room for your healers. I don't think blood DKs are terribly good at avoidance, so I wouldn't go that route.

Reforge everything you can to mastery, though. Mastery on most lvl80 toons is OP.

Do your professions, as well. Pick two that you can actually get the cataclysm level perks from.

I know alchemy isn't too bad. You get the full stat bonus on a cataclysm flask.
Jewelcrafting stinks because you can't use any of the new gems in gear with <287 iLvl.
Blacksmithing just gives you 2 more sockets
I haven't looked at enchanting, inscription, or tailoring.

Of the last 3, inscription is the cheapest to level by far.

LW + Inscription will net you the highest Stamina increase- ~980, IIRC.

If they really allow MoP consumables and profession perks at 80, it'll be super silly.

The perks probably will increase your stats by 50% or more...
