Other than some of the NAO tournament fights in the last season of Cataclysm, I always enjoyed watching good pmr back in BC.
I'd say any underpowered team doing well is worth noting. People love underdogs
I'll respect anything that plays well, but I tend to think of the "Classic" (not Vanilla-era, just old) comps:

A respected 3's is anything without an spriest or a BM hunter.

Rogue/Mage/Priest healer
Rogue/Lock/Shaman healer (common variant is RLD, Rogue/Lock/Rdruid)
DK/Warrior/Healer (Frost or Unholy, same comp. Healer is usually an hpal)
Warrior/Mage/Rdruid
Warrior/Spriest/Rsham (one of my personal favorites)
Mage/Lock/Rsham (the caster cleave to end all caster cleaves)
Unholy DK/Affliction Lock/healer
respect for rmp died when rogues got aoe stealth. :/

well, shroud turns every rmp opener into a "trinket or die" scenario.

at least before you could see the priest :p (rogue stealths, mage invis)
